I have worked for many years in Vancouver Canada as a private chef, we moved here to the UK 17 years ago where I worked for Julian at Coral Catering out of The Dolls House, Elham Valley road, where I helped in the kitchen and front of house. We also did a lot of outside catering. For a while I managed the pub, before we moved to The Royal Norfolk Hotel in Sandgate where I was in the kitchen doing

both breakfasts and lunches as well as outside catering. From there I moved to The Duke of Cumberland in Barham when Fiona and John O'Shea took it over, I worked under a fantastic head chef Mel. I stayed at the Duke through several different owners before going it on my own with Victoria's catering
