Today's dish was an assessment for my meat course element for my Italian menu it was Tagatelli and meatballs for the assessment today. The pasta was all homemade from start to finish and the meatballs were Conist of flavours from the shallots and tomato Sauce and Basil and oregano I am really pleased with how well I did today 💙💙

This Week's Dish I Created in Harpurs Bistro at Buxton and Leek College Was this Apple Pie a Butter and flakey Pastry Filled with a Decent Apple and toffee Sauce Filling Served with Custard and a Strawberry Coulis Pattern Note This Photo was from Last week but the outcome of the dish was the Exact Same to this picture 💙💙

This dish goes way back to Level 1 Poached Pears with Fruit Compote and shortbread this was the dish that was on of my beloved nannas favourite dish I did during Level 1 and I'd do anything to make it for her again I really would 😭🥺💜💜

Yesterdays Open day for the Hospitality and Catering Department Was a huge Success I had the privilege to give tours to young People from all walks of life who are looking into starting their Catering Journey I even Provided Reassurances To the Colleges Zero tolerance to Bullying Policy Given a Young Person's past in school given my past experiences the day was a Huge Sucess for all

Almost 2 Years ago I completed my Work Placement at the the The Cafe @ Green Pavillion they provided me with the Confidence and Knowledge of Local produce and Cooking and presenting Dishes and thease skills that have got me to where I am today Without them i wouldn't of got onto the Level 3 NVQ Course in college if you'd ever get the Chance to work or do a Placement at the Cafe I would go for it they are the best staff you could work for in Buxton 💙💙💙

Salmon en Croute With a Sweet Pepper Gel and a Thick Creamy Dill Sauce and Cucumber Swirls and Asparagus on Top and Grilled Salmon Chunks
The way the Salmon en Croute also has spinach inside the pastry but doesnt affect the Salmon taste and flavour
