The vibrant flavours of the Caribbean are a feast for the senses, and with the right approach, you can bring that island magic to your own kitchen! Today, I'm sharing 3 tips from Mama Shar, a seasoned veteran of Caribbean cuisine, to elevate your Caribbean cooking:
1. Embrace the Heat (Sensibly): Caribbean cuisine isn't shy about spice, but don't let it intimidate you! Start with milder peppers like scotch bonnets or habaneros, adding them whole or chopped for a slow, controlled burn. You can always adjust the heat later if needed. Remember, it's easier to add heat than take it away!
2. Go Beyond Jerk: While jerk chicken is a Caribbean icon, there's a whole world of flavourful dishes waiting to be discovered. Try a Trinidadian curry goat with coconut milk and rich spices, or a Haitian griot (marinated and fried pork) with pikliz (spicy pickled vegetables). Don't forget the islands' seafood bounty β a Jamaican escovitch (fish with pickled onions and peppers) is a tangy delight!
3. Fresh is Best: Caribbean cooking celebrates the abundance of fresh ingredients. Swap frozen veggies for vibrant local produce like plantain, mango, and okra. Herbs like thyme, cilantro, and scallions add a burst of life, while fresh ginger, garlic, and onion form the base of many dishes. Don't forget the citrus β limes, oranges, and grapefruit add a bright, refreshing touch.
Bonus tip: Master the Marinade: A good marinade is the secret weapon of Caribbean cuisine. Combine citrus juices, spices, and aromatics like ginger and garlic to infuse your meat or seafood with flavour. Let it sit for at least an hour, or even overnight, for maximum impact!
