Made the chines national dish
White vinegar + red w**e and maltose syrup was poured over the duck for and hour to tighten up the duck skin
Hunger to dry for another 3 hours
We got a crispy golden skin
Served with julienned vegetables, bean sauce and thin pancakes.

These dumplings was soft on top, juicy in the middle.
We made perfect gyoza in class at le cordon bleu
