Basque cheesecake, but not straight out the fridge like a mistake.

Quick kiss of heat from the blowtorch — just enough to wake it up. Soft centre loosens, edges relax, flavour actually comes through the way it should. Not melted, not cooked… just right.

It’s one of those tiny details most people wouldn’t think about, but it’s the difference between “nice dessert” and “where did you get this from?”

We’re proud to introduce the first menu in our new Signature Menu Range from Dill ’n Pickle by Chef Clyde Wernli

Our British Signature Menu is a five-course celebration of classic flavours, elevated with care, technique, and a deep respect for local produce.

We begin with warm Dorset ale and treacle bread, served with Dill ’n Pickle cucumbers

Amuse bouche follows: a coastal cheddar and leek croquette with rich tomato chutney

The second course reimagines a true comfort classic — cauliflower cheese, finished with Dorset Red Leicester

For the third course, delicately poached place ballantine is paired with a smooth scallop mousse

The main event is a proper British staple: slow-cooked steak and ale pie

And to finish, a nostalgic favourite — sticky toffee pudding with a Baileys toffee sauce

This is British food done our way. Bold, familiar, and unmistakably comforting
