Fermentation day in the kitchen — and this time it’s all about mushrooms.

Once fermented, they’ll find their way into our tarts, risottos, and pastas — and nothing goes to waste. The leftover stock becomes liquid gold, adding depth and character to every dish it touches.

Last weekend we had the privilege of cooking for a British Army retirement dinner.

An incredible evening celebrating service, stories, and seriously good food.
