This beautiful chocolate fudge cutting cake was part of an entirely gluten free dessert table. I decorated it with two silk flower sprays and a precision cut topper.

Bakery prep for a week of gluten free baking. This means cleaning all the surfaces and removing my gluten equipment then replacing it with dedicated gluten free equipment. But even now, my kitchen wouldn't be safe for those dealing with celiac disease or a severe allergy. Keeping my customers is paramount.

This morning was devoted to trialling gluten free bread. My hands-down favourite was the seeded bread. The darker loaf contained millet flour from the Asian food shop but I think I need a lighter one. The tiger bread needs to be more 'tigery' and I both under-rose and overcooked the brioche. We trial so we can perfect in our oven, with our ingredients, so overall it's a success and it will all be eaten. There's no shame in having failures if we use them as an opportunity to learn.
