Lovely to work alongside Estate staff especially when guests are shooting, fishing etc. Grouse in rice paper wraps, Wild hill loch brown trout with Dill, lemon, salt and a little butter. Some Nigiri & Sashimi for a change and of course something sweet to end off with.
