A very limited special. Just 18 boxes.

Due to a FedEx error & correction we have a very small amount of a strawberry co-ferment on our hands, thanks to our friends at ALL CAPS Coffee ❤️

Produced by trailblazer Edinson Argote this Caturra varietal is inoculate with yeast and fermented with strawberries. Creating a wild profile of strawberry ice cream and booze.

This process divides much of the speciality coffee world. When done correctly we find them a very engaging and fun cup.

We won’t give this an official release number.

Since 2017, we’ve always placed quality at the forefront of everything we do.

What started as a humble coffee shop with no more than £2,000 has gradually evolved into something much more. Today, we roast our own coffee, run a café bar, serve natural w**e and offer a carefully curated selection of fresh, seasonal flowers.

Year after year, we continue to progress, reinvest and refine what we do. Yet the principle that started it all remains unchanged. Quality.

With our coffee, we place a strong emphasis on seasonality, sourcing rare and exceptional lots that showcase both traditional varieties and innovative modern processing techniques.

This week, we’re brewing Los Papales, an anaerobic washed Pacamara from Nicaragua.

The importer’s tasting notes suggested dark chocolate and orange, but through our approach to roasting, we’ve found the coffee expresses itself a little differently.

In the cup, we find a more delicate, tropical character. Notes of ripe peach, a gentle citrus sweetness and a beautifully creamy finish reminiscent of sweet vanilla cream.

A lovely example of how the same coffee can reveal different characteristics through roasting, and why we continue to explore, experiment and refine what we do.

Wednesday, like all weeks, is the final prep day before we welcome you back tomorrow.

What that looks like is Luke roasting & Lucy preparing some beautiful bouquets.

We roast on a Stronghold S7X. It’s incredibly precise and powerful. We roast in small batches, intentionally. Our goal is to roast light and clean, highlighting each coffee’s natural characteristics. Never masking them with roastiness. STRONGHOLD

Lucy handpicks the flowers each week, with a focus on quality and the season. She then makes a limited number of bouquets for you to simply pop in a vase at home. .still

Our aim is not to reinvent the wheel. More to do a few things, very well. To elevate the now and maintain a high standard where it has fallen by the wayside in modern hospitality.

Yesterday we took to the M62 to visit the team behind Cornershop, who had a bunch of our coffees on for a full bar takeover.

When we taste our own coffee in our own shop, we naturally approach it through a more critical lens. We’re always looking for something to tweak, change or improve. Stepping into another coffee shop and drinking those same coffees completely changes your mindset.

And they were tasting far better than we’d ever imagined.

Our washed heirloom, grown by Simon Brown, was tasting like lemon biscuits on batch filter. Never have I tasted so much clarity in a coffee!

The two Panamanian coffees were being pulled as “MotorSpros” and were distinctive, aromatic and incredibly clean. Thanks motorscoffee for the method.

More than anything, it was great to see another team working with our coffees. We learnt a lot from the way they were brewing and serving them, and there are definitely a few things we’ll be taking back with us to improve the service in our own shop.

Sandwiches from Depot behind were incredible too.

A huge thank you Peter and the team for the hospitality, and for giving our coffees so much care and attention.

Matcha was good too 😏
