Continuing on in the heatwave, we spent our bank holiday Monday in the Cotswolds for a hen do. An unbelievable set-up and great company all around. With the weather being so warm, this menu was requested especially for maximum satisfaction. I made a cheesy garlic focaccia with a whipped garlic butter, spaghetti carbonara to follow, and the fudgiest chocolate brownie with berries and vanilla ice cream.

Of course serving 19 people during a heatwave would happen to us at Ducas Cooks. However, whatever the weather, we’re always up for it! This was a light, summery meal with simple, elegant flavours. To start, the trusted confit tomatoes with focaccia, and burrata with basil oil. Then for mains, a crab linguine with lots of chilli, garlic, lemon and parsley. To finish, the classic tiramisu. Great flavours, great set-up and great vibes all around.

Another Hen do … this time for 15 guests! 🐓

The menu was the following:

Roasted butternut squash and sage crostini with whipped ricotta to start.

Caramelised onion and Nduja mac and cheese with a tomato salad for main.

Guinness cake with berries and cherries to finish.

And yes, I got roped into their murder mystery game after dessert. We don’t just show up for the food, we show up for the full evening.

A 30th birthday in the Cotswolds this weekend, and it was one of my favourite menus to date!

We kicked things off with an Asian-inspired tuna tartare. Soy, lime & ginger dressed tuna on a bed of mashed avocado, finished with crispy wonton chips.

For the main, a classic roasted sirloin, creamy mash, garlic green beans and purple sprouting broccoli with a rich red wine jus.

And to finish, the Ducas Cooks special. Lemon posset with a pistachio shortbread crumb.

I had a lot of fun delivering this menu 😊

Back at it with a Ducas cooks Hen do. This time for 15 people for guests and the vibes were impeccable.

We started light with fennel and blood orange salad with a blood orange and mustard vinaigrette, topped with burrata. A fresh light starter to kick start the meal.

Followed that up with a classic prawn linguine, white wine, lemon, chilli, garlic. Simple flavours but really hits the spot!

Then to finish, a rich chocolate mousse. Decadent and indulgent.

Happy faces all round and genuinely one I really enjoyed.
