THIS IS THE SECOND OF MY WEEKLY BLOGS
HOW TO FOLLOW A YACHT CAREER AFTER A FEW YEARS AT A MICHELIN STAR PLACE
Before I get stuck in the 'latest jobs' on the left hand side now have positions up to sous chef at 2 and 3AA Rosettes
The idea of working on a luxury yacht can seem a good choice for a person who has spent a few years as a senior chef at a Michelin Star place.
But what do you need.
First you will have to realize that you are the only chef, or one of two, preparing food for the crew, owners and staff. That can give you the ability to refine food to the latest in trend rather than meeting much more complex dishes.
You MAY have to share a cabin. Things are tight for the crew abroad.
You should show a photograph on your CV and, preferably something of the style of your food.
You will have to ensure that all tattoos are carefully hidden from view. Facial hair is not generally accepted and is better left out.
Smoking is also pretty well banned. We had a man who was Head Chef at a 3 Michelin Star place or years and we were unable to place him.
You will need STCW 95 and ENG 1. They are maritime laws which govern behaviour at sea and on board cleanliness. You will find a rule on them on our site at www.gladstoneparkchefs.co.uk
Now you will need to tackle your holidays. Mostly you will get one month off for two on but you may have your own needs and this is by no means the norm.
The one thing you will face is time. Usually you will be wanted within a month that means you need to be doing relief but don't forget e only place 5 or 6 a year and you have to be ready even if you do not gt a position. However one of our best guys spent over 10 years in a position and that can be enough to buy your own house!
