Dear All,
This message is not one we anticipated having to share, but its important to us that we communicate openly with our community. After much deliberation, we regret to announce that The Indian Chef will be closing its doors. This decision comes as a result of rising operational costs and a persistent staff shortage, challenges that we have faced increasingly over the past months.

For the last two years, we have poured our hearts and souls into The Indian Chef, creating a space that we hoped would foster warmth, connection and a love for authentic Indian Cuisine. Throughout this journey, we have been fortunate enough to connect with countless incredible individuals- both our loyal customers and the dedicated team members who have worked for us. Each meal served has been a labor of love, and we have genuinely cherished every moment spent in the kitchen.

We want to take this opportunity to express our deepest gratitude to each and everyone of you for your unwavering support and patronage. Your enthusiasm for our dishes and your kind words have meant the world to us. Thank you for being a part of our story and allowing us to be a part of yours. We will carry the memories of the time spent with our customers to our hearts. Thank you all !!!

Garam masala, meaning "hot spice mix" in Hindi is a blend of ground spices used in Indian cuisine, adding warmth and aromatic flavor to dishes. While "hot" refers to the spices' warming effect, not necessarily heat, it's a staple in curries, stews, and marinades.
Here's a more detailed look:

Uses:
It's used in a wide range of dishes, including curries, stews, marinades, pickles, and even some desserts.

When to add:
Garam masala is often added towards the end of cooking to allow the flavors to meld, or sprinkled over food before serving.

Flavor Profile:
It adds a warm, aromatic, and slightly sweet flavor with a hint of spice.

Beyond Cuisine:
In Ayurvedic medicine, garam masala is believed to have warming properties and is used for various purposes.

how to make homemade garam masala spice mix powder

notes:
firstly, make sure to roast on low flame until all the spices turn aromatic.
also, roast all the spices separately, else there are high chances for it to burn.
finally, garam masala recipe stays good for months when prepared with fresh spices and roasted well

¾ cup coriander seed
½ cup cumin
1 tsp caraway
2 tbsp pepper
3 dried red chilli
5 star anise
3 inch cinnamon
2 mace
5 black cardamom
2 nutmeg
3 tsp cardamom
1 tbsp clove
2 tsp fennel
5 bay leaf
1 tp ginger powder

Instructions:
firstly, in a heavy-bottomed pan take ¾ cup coriander seed and roast on low flame.
roast until the spices turn aromatic. keep aside.
in the same pan add ½ cup cumin, 1 tsp caraway and roast on low flame.
roast until it turns aromatic. keep aside.
further, take 2 tbsp pepper and 3 dried red chilli.
roast until the chilli turns crisp. keep aside.
now add 5 star anise, 3 inch cinnamon, 2 mace, 5 black cardamom, 2 nutmeg, 3 tsp cardamom, 1 tbsp clove, 2 tsp fennel and 5 bay leaf.
roast until all the spices turn aromatic without burning. keep aside.
cool all the spices and transfer to the blender also, add 1 tsp ginger powder and blend to a coarse powder.
finally, garam masala is ready. store in an airtight container and use as required for curries.
