We are incredibly excited to announce we’ll be feeding the crowds at Fringe by the Sea 2026!

From July 31st to August 9th, we are setting up the pasta trailer right by the coast. We’re bringing over 20 years of hospitality expertise, a massive dose of heart, and a menu built to fuel your festival days.

​No precious small plates here, just honest, soul-satisfying Italian comfort food served up in a massive bowl. Come grab a taste of our 100-year-old family recipes, passed down from the badass women of our family, all the way to Mamma, and on to us.

OLD SCHOOL SAUCE. NEW SCHOOL SOUL.

​We didn't just invent these flavours, we inherited them. The Carb Club is built on 100-year-old recipes passed down through generations of badass Italian women in our family. Straight from the motherland down to our own Mamma. It’s a legacy of slow-cooked patience, secret ingredients, and a deep-rooted belief that food is the ultimate form of love.

We use the knowledge passed down and infuse it into our own dishes, like our Drunk garlic, fresh pestos, and Tequila infused bruschetta bowls that we know nonna would raise an eyebrow at...but still finish the lot.

We'll be until july 25th so come say and try an old school classic or a future favourite.

Wee bowls for wee humans.

Whether it’s lunch, dinner or a "please just eat this" meal, our Bambino Bowls are the universal tiny human pleasers. Simple, fresh, and vibrant.

Our bright, nut-free pesto. It’s packed with fresh basil garlic and parmesan.

The "Sugo." A rich, slow-cooked tomato sauce that tastes exactly like Sunday at Nonna’s house.

The gold standard of comfort. Just silky, melted butter and a pinch of salt. It’s a classic for a reason.

​All our dishes are nut free and egg free so you can be stress free. (pasta is Durum wheat, no egg). Excessive amounts of parmesan guaranteed.
