Its been nearly 4 weeks since we last posted. Mum is doing well, still on strict rest and getting pretty bored! She was hospitalised with multiple pulmonary embolisms which also caused some strain to the right side of her heart.
But she is doing well and on the right track and we'll know more in October when she has a checkup. Thank you for all the well wishes and cards, it is really appreciated.
On a different note; I entered our rum Christmas cake into the Great Taste Awards and delighted to say we got a 1 star for it. I'll be starting to soak the fruit in the next couple weeks and will put more information on then.
Judges notes:
"This full bodied fruity looking cake has a rich and inviting appearance. The soaking of the vine fruits in rum has produced a moist, slightly boozy texture, but has not softened it too much as the cake cuts well into portions. It is very generous with the fruit, giving a balanced taste and not too sweet. The evenness of the fruit on cutting encourages the idea this is a very carefully-made product."
"This fruit-packed Christmas cake is lovely and tall and looks very attractive. The judges loved the incredibly moist texture of this cake, tand the fact that it is not too sweet despite all the dried fruit."
