At 90c they’re ready. Time to rest them and let the juices distribute throughout the brisket. A couple of hours and they’ll be good to slice! 👌

These beauties will be ready to serve at Abergavenny Cricket Club at 3pm this afternoon.
I put these on at 105c over Mesquite last night at 9pm, they’ve just hit the stall at 70c and now I’m foil boating them for the next part of the cook. This retains the moisture whilst ensuring I a decent bark on the top. Can’t wait to slice and have a taste later on. 👍
