“Roots of Fire” revisited Clover Club
Welcome to our universe of associations and recuperations at La Groupie du Pianiste 🍸🍹
The conception and creation of this cocktail was complex, all of it made me think differently about the aspects of creation and following rules as being sustainable.
This cocktail is a personal creation rooted in memory, terroir, and storytelling. It draws its inspiration from the San Cristóbal volcano in Nicaragua, a symbol of strength and depth, combined with the warmth of my mother’s strawberry salad recipe, and the aromatic, sun-drenched herbs of Provence, where I live and work.
The rum used is Flor de Caña 12 years old, deep and complex, with warm notes of oak and spice that recall the volcanic richness of its origin. It pairs harmoniously with our handmade ground hazelnut liqueur, bringing a soft, nutty depth.
To this, we add a macerated strawberry juice, slowly infused with lemon thyme, laurel, and a touch of red wine, evoking both the comforting memory of a family recipe and the aromatic landscapes of Provence.
A splash of our homemade Verjus introduces a bright, tart freshness, while a silky emulsion of recovered strawberry juice adds texture and intention, a nod to sustainability and craft.
Finally, a few drops of our handmade cigar bitter wrap the drink in an elegant, smoky warmth — a discreet but powerful echo of aged wood and distant fires.
For the final touch, a candy made from recovered strawberry juice crowns the drink, connecting garnish and story in one sweet, delicate note.
Tasting note:
Complex yet balanced. Earthy notes from hazelnut and aged rum meet the bright acidity of Verjus and the herbal fruitiness of the strawberry infusion. The emulsion brings a smooth, velvety mouthfeel, while the candy adds a playful and poetic finish.
