Hello, Foodies! 🥗🍴 Spring has sprung 🌸 and so have our appetites for something light, fresh, and absolutely delicious. Today, we're introducing a vibrant dish that screams spring: Lemon Green Veggie Pasta! 🍋🥦🍝
Ingredients:
🍝 200g whole wheat pasta
🌱 1 bunch of green asparagus
🍃 A handful of fresh spinach
🟢 1/2 cup green peas (fresh or frozen)
🧄 2 garlic cloves
🍋 Juice and zest of 1 organic lemon
🫒 2 tbsp olive oil
🧂 Salt and pepper to taste
🧀 Parmesan or vegan cheese alternative for serving
Here's how to make it:
1️⃣ Wash all your veggies. Cut the asparagus into 3 cm pieces, keep the spinach whole, and if you're using fresh peas, shell them.
2️⃣ Cook your pasta in boiling salted water until al dente. Save a cup of pasta water before you drain.
3️⃣ Heat the olive oil in a large pan and add the chopped garlic. Once fragrant, add in the asparagus and peas, sauté for 5-7 minutes until tender.
4️⃣ Add the spinach, lemon juice, and zest to the pan. Stir until the spinach wilts. Season with salt and pepper.
5️⃣ Add the drained pasta to the pan, toss until everything is well mixed. Add pasta water as needed to make a lighter sauce.
6️⃣ Divide the pasta between two plates, garnish with grated parmesan or your preferred vegan cheese alternative. Serve immediately. 🍽
