Glazed Chicken Lollipops with Baby Beets 🍗🍭💜
Ingredients :

4 chicken drumettes, "frenched" to make lollipops 🍗
For the Glaze:
3 tablespoons of balsamic vinegar
2 tablespoons of honey or maple syrup 🍯
1 tablespoon of whole grain mustard
1 clove of garlic, minced 🧄
For the Vegetables:
4 small baby beets, cooked and peeled 💜
1 small carrot, cooked and sliced
¼ cup of fresh or frozen green peas, blanched 🟢
Fresh chervil or parsley for garnish 🌿

Preparation :

1. To "french" a drumette: use a small, sharp knife to cut around the bone at the thin end. Push the meat down firmly towards the thicker end to create a "lollipop" shape.
2. Season the chicken lollipops with salt and pepper. Pan-sear them in a hot, oiled skillet until golden brown on all sides and cooked through, about 10-12 minutes.
3. While the chicken cooks, whisk together the balsamic vinegar, honey, mustard, and garlic in a small bowl to create the glaze.
4. Once the chicken is cooked, reduce the heat to low. Pour the glaze over the lollipops and toss gently for 1-2 minutes until they are coated in a sticky, glossy sauce.
5. To plate this elegant dish, artfully arrange the glazed chicken lollipops on a white plate.
6. Warm the cooked baby beets and carrots in the same pan with any leftover glaze.
7. Arrange the beets, carrots, and blanched green peas around the chicken. Drizzle any remaining glaze from the pan over the plate and garnish with fresh chervil.
