Ciao, my name is Giulia and I don't have the gift of synthesis 😂🤙 so for you today the full - and long - version of the Mattonella Palermitana 🔥
INGREDIENTS x 6
For the base:
- 250 g 00 flour
- 250 g of 0 flour
- 275 g water
- 15 g yeast
- 15 g fine salt
- 50 g granulated sugar
- 50 g lard or butter
- 2 whole eggs
- sesame seeds
For the filling:
- 400 g of tomato pulp
- 200 g mozzarella cheese
- 200 g cooked ham
- 2 tablespoons of extra virgin olive oil
- oregano
- salt
- pepper
Start preparing the Mattonella from the dough for the base.
Pour the water into a bowl, add the sugar and the crumbled yeast, and mix until the yeast has dissolved. Add the two types of flour and knead for about ten minutes. Then, add the lard or softened butter and salt a little at a time and knead again until soft and slightly sticky. Cover with a towel and let rise for 2 hours or until doubled in volume. Meanwhile, prepare the filling💪 Slice the mozzarella and put the tomato pulp to drain in a colander so that it loses some of its liquid. Then, season it with the oil, salt, pepper and oregano.
When the dough has risen, divide it into two equal parts and roll out one half on a pastry board dusted with flour.
Transfer this half of the dough to a baking dish about 20x28 cm lined with a sheet of baking paper. Spread the seasoned tomato pulp on top first, taking care to leave 2 cm of border on all sides.
Next, add the mozzarella slices and, finally, the cooked ham.
Brush the edge with a little lightly beaten egg, then roll out the other half of the dough as well and overlap it with the filling. Seal the edges well by pressing the dough with your fingers. Brush the surface with the remaining egg and sprinkle with plenty of sesame seeds.
Let rise for another 30 minutes, then bake in a preheated oven at 180 °C for about 35-40 minutes. At the end of baking it should be nicely browned. Take the Mattonella out of the oven and let it rest for a few minutes before slicing and eating all!!!
