SlimMezza’s Festive Fruitcake Recipe 🍒✨
Get ready to impress your loved ones with this rich, flavorful, and oh-so-moist fruitcake—perfect for the holiday season or any special occasion! 🎄
Ingredients:
🌟 For the Fruit Mixture:
• 2 cups mixed dried fruits (raisins, currants, dried cherries, apricots—you choose!)
• 1 cup chopped nuts (walnuts, pecans, or almonds)
• 1 cup orange juice or rum (for that extra zing!)
• 1 tbsp grated orange zest
• 1 tsp vanilla extract
🌟 For the Cake Batter:
• 1 cup unsalted butter, softened
• 1 cup brown sugar, packed
• 4 large eggs
• 2 cups all-purpose flour
• 1 tsp baking powder
• 1 tsp cinnamon
• ½ tsp nutmeg
• ½ tsp ground ginger
• ½ tsp salt
• 1 tsp vanilla extract

Instructions:
1️⃣ Infuse the Fruit:
In a bowl, mix the dried fruits, nuts, orange juice (or rum), orange zest, and vanilla. Let it soak for at least 2 hours—overnight for maximum flavor!
2️⃣ Prep Your Oven:
Preheat to 325°F (160°C). Line a 9x5-inch loaf pan with parchment paper.
3️⃣ Create the Batter:
In a large bowl, cream the butter and sugar until fluffy. Add eggs one at a time, beating well.
In another bowl, whisk together flour, baking powder, cinnamon, nutmeg, ginger, and salt. Gradually mix the dry ingredients into the wet ingredients.

Fold in the soaked fruit mixture (and any leftover liquid!). Pour into the pan and bake for about 1 hour or until a toothpick comes out clean.
