A customer gives me seafood to create dishes for her and her guests. Today was grilled octopus! After slow cooking for 5 hours, I peeled and grilled it as well as fennel root, onion, lemon and charred tomatoes on the vine. Sliced and tossed w olive oil, lemon and a collection of fresh herbs from the garden!
Anne will serve it with a Caesar salad and fresh baguettes . Gorgeous

My mother always had a beautiful flower garden. Her love for flowers is certainly in my genes. I’ve been taking photos of all my lovely Rhodos, roses and trees! These are for you Mom!! 💐💝

One of this weeks creations is Jamaican Jerk Chicken, beans and rice, roast squash, peppers and blue sweet potato plus home grown kalettes. Delicious to go!
I apprenticed with three Caribbean Sous Chefs. I got them to teach me and give me their recipes many moons ago👩‍🍳

Last Friday I proudly served the 150 guests and fabulous volunteers, wonderful makers and artists at the Comox Valley Transition Society fundraiser at 40 Knots Winery.
A charcuterie table for the volunteers, local greens classic salad with tarragon vinaigrette,
Braised espresso balsamic shortribs and chocolate porter cake, plus chilled chili mocha(forgot to take photo but it was delicious )

So, yesterday at Wednesday Comox Market a customer said “ your menu is very interesting “, and not in a positive manner.
So in honour of this gentleman I have made something I’ve been dreaming about. Thai Thighs with Stir Fried Veg, Thai Basil and Blackberries!! Gorgeous, delicious, super seasonal!
Boring smoring!! I cook the way I like to eat! Flavour, flavour and more flavour, flavours that meld together to@put a smile on your face!😁
