One of the most common mistakes in baking is overmixing your batter, and it can completely change the texture of your cake.
When you mix too much, the gluten in the flour becomes overdeveloped, which can make cakes dense, tough, or chewy instead of soft and tender. Overmixing also causes the air bubbles that help your cake rise to collapse, leading to a flat or heavy result.
Even if your batter looks smooth, it’s often better to stop mixing as soon as the ingredients are just combined. Lumps in the batter aren’t a problem because they actually help create a light, delicate crumb.
