Somewhere between the south of France and the coastal region of Haiti you get this dish from the last edition of Racine Supper Club.

Pan-seared snapper fillets on top of silky confit peppers and a spicy Kreyol Sauce. Served with pikliz and fennel herb salad.

I’ve played with the idea of this dish over and over again and it’ll probably change slightly the next time I serve it but that’s the beauty of these supper clubs. The opportunity to create freely and take a dish from my mind to the plates.

The classic French dishes I learned to cook at the beginning of my career were reinforced and reimagined with the Afro-Caribbean flavours of my childhood.
