Well I have recovered and rested from the Christmas Holiday Season and want to thank all my
Supporters out here. All you who encouraged me to step out and start catering and baking, all who liked, commented and shared my posts and to everyone who bought either catered meals or treat boxes. I especially want to thank all my supporters who passed my name and number on to others in the community who then contacted me.

Thank you from the bottom of my heart. It’s customers and friends like you who inspire me to keep pursuing a life long dream.

12 days of Baking days 10 11 and 12
I hope you all enjoyed your Holidays and special moments with those you love. We had a blast visiting family and friends here’s the final 3 recipes of the 12 Days of Baking

Happy New Year!

Day 10
Lasagna
This is a gluten free dairy free lasagna.
My sauce was made with garden Tomatoes. I like to use Swiss chard or Beet greens in my lasagna as my daughter does not prefer cooked spinach.

Brown rice noodles and dairy free cheese is in the 3rd picture.

Day 11
Dry Ribs

I cut the pork loin into nice tiny pieces.

Mix cornstarch and garlic and salt and onion powder in a bag, shake the pork bites in the bag. Place in corn oil fry until golden brown and done. I sprinkle sea salt on top and a squeeze of lemon juice when I’m ready to serve it.

You can use egg you can dip the pork bites in egg then in the cornstarch but I can’t have egg and this worked really well for us.

Day 12
My take on ratatouille.

Slice zucchini carrots and beets line them in a circular pattern in your favourite cast iron pan that has been prepped with oil of your choosing ( I use corn)
Sauce is a cream sauce I melt my vegan margarine maybe 2tbsp
Add milk ( I use cashew milk) season it with fennel garlic, onion salt and pepper.

In this recipe I forgot to add the sauce to the bottom of the pan before I layered in the veggies. So I just threw it on top and it turned out delicious.

With my savoury and dinner dishes I have a tendency to not measure and time, I tend to eyeball and taste as I go.

Day 9 of 12 Days of Baking

One step Lemon meringue Pie
( ok I makes it two step with the meringue. If you don’t want to do meringue you can add icing sugar to the top of the pie once cooled.)

4 large eggs
1/2 cup (1 stick) unsalted butter, melted
1 lemon, sliced into wedges, seeds removed
1 1/4 cups sugar
1 teaspoon vanilla extract
1 frozen pie shell

Preheat oven to 350º F.
Place eggs, butter, lemon slices, sugar and vanilla extract in a blender, and pulse until mostly smooth.
Pour lemon filling into frozen pie shell and bake for 45 minutes, or until set.

Meringue
4 large egg whites
1/4 teaspoon cream of tartar
1/4 cup sugar

Separate egg yolk from whites
Allow egg whites to reach room temperature to allow them to whip to their fullest.
Preheat oven to 350 degrees.
Pour eggs whites into a spotlessly-clean bowl.
Whip the egg whites until they are glossy and smooth, then add the cream of tartar to help the egg whites hold their form.

Slowly add the sugar to the egg whites about a tablespoon at a time, beating after each addition until the sugar is incorporated. Continue beating until stiff peaks form.
Spread meringue on top of pre-baked or no-bake dessert, place about 4 inches under the heat and bake for about 10 minutes or until meringue is a nice golden.

Day 8 of 12 Days of Baking

Today I will share a savoury favourite

Christmas Meat pie

1.5 -2 lbs browned ground beef ( or whatever ground meat you’d like)

One potato peeled and grated

Shredded carrots maybe one cup

Garlic onion salt pepper cumin all to taste

Mix meat and seasonings and potato and carrots together,
Place into your favourite pie dough.

Add a top crust I like to cut cute shapes into mine.

Whip up egg yolk and spread on top of crust bake at 400 for 15 minutes then turn oven down to 350 bake until crust is golden.

My crust I make.

2 1/3 cups gluten free flour ( maybe a little more of needed)
1 teaspoon salt (I usually just sprinkle some in.)
1 cup Coconut oil
6-10 tablespoons ice water

The coconut oil really make for a flakey pie crust.

I like to have a few things made ahead of time so I’ve the Christmas break and New Years we have some foods prepared and ready to pop in the oven. Less time for me to be in the kitchen and more time for me to interact with my kiddos

Elf Cookies

Mix up peanut butter cookies
1 cup peanut butter
1 cup sugar
1 egg 

Roll into 1.5 inch balls bake on 375C oven until crackly and bottom is starting to brown. Maybe 10 minutes

As they are baking unwrap Hershey kisses.

Place a kiss in the Center of each cookie let cool!

When my cookies came out too flat, Timothy said, ‘ Mom, Remeber if you use brown sugar instead of white it stays better’. Glad he listens when I teach😉

We got this idea when I saw a FB post of someone’s elf making cookies! Kids and I laughed and laughed and a cookie tradition was born 🍪💖

Day 6 of 12 days of baking

Chocolate confetti squares

Melt in sauce pan over medium heat
3 tbsp butter ( I used vegan becel margarine)
1.5 cups peanut butter
1 tsp vanilla

Once that’s melted and warm add:
3 cups chocolate chips, remove pot from heat and stir until chocolate has melted.

Set aside and cool to room temperature

Add 2 250g Kraft fruit mini marshmallows mix,
Pour into greased 9X13 pan, refrigerate about 2 hours or until firm.

Enjoy

These are also some of Isabel’s favourite Christmas goodies. Until she asked for them when she was a wee one, I had never made them. I love the chocolate chips in place of the butterscotch becasuse the colours of the marshmallow just pops!

When I started promoting my Christmas treat boxes and caterings, I never imagined I’d get to the point to say:

I AM OFFICIALLY SOLD OUT of treat boxes and I just booked my last catering for 2022!!

I have a few orders still to fulfill next week, but the baking from this day forward will be for my family Christmas. 🎄🎄💖

Day 5 of 12 days of baking

Cinnamon buns.

When I was diagnosed with Celiac Disease I thought I’d never enjoy a cinnamon bun again. I was blessed with a delicious cinnamon bun from a bakery in Oregon years ago when we were down there for a conference, however, I found the bun was too greasy.

Fast forward a few years and I have found a tried and true bun recipe that works perfect with my dairy free gluten free needs. And my daughters favourite Christmas treat.

In a small bowl combine
1 cup warm water
1 tsp sugar
1.5 tbsp traditional yeast

While that’s proofing allow about 10 minutes.

In a pot add:
1 cup milk ( your favourite dairy free milk will work I use cashew milk)
3 tbsp coconut oil
4 tbsp
Sugar
1.5 tsp salt

Scald and let cool
To cool the milk mixture, add 1/2 cup cold water and add1 blended egg.

Stir in 4-5 cups of flour.( I use PC gluten free flour) Start with 3 then add flour as needed to make a soft dough.

Let dough rise about 15 minutes. Roll onto floured parchment paper add cinnamon and brown sugar roll up cut into 1 inch slices arrange on greased cookie sheet or pan,

Bake at 350 for 20 minutes

The raw dough can be frozen if you want to make a batch and only cook a few at a time. Enjoy.

I’m not going to lie, sometimes my dough turns out and sometimes it does not. 🤷‍♀️🤦‍♀️

White chocolate candy cake bark.

So years and years ago my cousin brought a delicious treat to a Christmas thing we were at and it was so good. I’ve always been a fan of white chocolate.

She unfortunately passed away way too soon. And every year since I’ve made these delicious treats and think of her.

White chocolate candy cane bark

In a double boiler I pour about a bag full of Hersey White chocolate chips to melt. See the burner on medium low heat. Stir often until chocolate is smooth.

In a blender or processor, but I’m about 3-5 candy canes of choice to blend up.

Pour into melted chocolate mix and pour mixture onto parchment lined cookie sheet spread out with spatula, place in fridge to harden. Once hard break into smaller pieces.
