Day 9 of 12 Days of Baking
One step Lemon meringue Pie
( ok I makes it two step with the meringue. If you don’t want to do meringue you can add icing sugar to the top of the pie once cooled.)
4 large eggs
1/2 cup (1 stick) unsalted butter, melted
1 lemon, sliced into wedges, seeds removed
1 1/4 cups sugar
1 teaspoon vanilla extract
1 frozen pie shell
Preheat oven to 350º F.
Place eggs, butter, lemon slices, sugar and vanilla extract in a blender, and pulse until mostly smooth.
Pour lemon filling into frozen pie shell and bake for 45 minutes, or until set.
Meringue
4 large egg whites
1/4 teaspoon cream of tartar
1/4 cup sugar
Separate egg yolk from whites
Allow egg whites to reach room temperature to allow them to whip to their fullest.
Preheat oven to 350 degrees.
Pour eggs whites into a spotlessly-clean bowl.
Whip the egg whites until they are glossy and smooth, then add the cream of tartar to help the egg whites hold their form.
Slowly add the sugar to the egg whites about a tablespoon at a time, beating after each addition until the sugar is incorporated. Continue beating until stiff peaks form.
Spread meringue on top of pre-baked or no-bake dessert, place about 4 inches under the heat and bake for about 10 minutes or until meringue is a nice golden.
