🇭🇺HUNGARIAN CREAMED SPINACH WITH GARLIC (Spenót Főzelék) 🇭🇺

There's a reason why this is a Hungarian classic. It's indescribably delicious. There is something both satisfying and comforting about this rich green garlicky mass. It slips down easily, and leaves you wanting more.

Tradition mandates the use of lard .
I use Extra Virgin Olive Oil ( obviously 🙄 )
This side is wonderful served with pork chops or roast/fried chicken.
Or, if you’re like my daughter Artemis,
Just a HUGE bowl 🥣 of it all on its own!

I made some non European food tonight 😂

Filipino Pancit!
My good friend always cooks this !
It’s a staple at parties and a favourite.
My kids are always telling me I don’t make it as good as Tita Mae. They are very critical when it comes to food ( I have no idea why 🤣)
But tonight, I nailed it!
Even though I made it a bit non traditional by adding asparagus and ramps, I think my Filipino bestie would be proud 🥹

I’m at the asparagus farm at least 2-3 times a week when it’s in season.
I add it whenever I can!

I’ve been thinking about this cake for months!
Awake at night, going over every step.
I haven’t had time to play around in my test kitchen but I pushed myself to make it and it’s just in time for Mother’s Day!

The Traditional Esterházy Cake

Esterházy Torte is probably one of Hungary’s most famous desserts.

Invented by Hungarian pastry chefs in the 19th century it quickly became famous around the globe.
There is a lot going on with this cake!

Esterházy Torte is made out of almond meringue (sometimes walnut or hazelnuts) with alternating layers of custard buttercream ,topped with apricot jam, then iced with a fondant glaze and decorated with a characteristic chocolate pattern.
There are, however, many different recipe variations ( and I don’t like to follow recipes 😂)

This cake was not an easy challenge but I wanted to make it for my Mom & Nagymama ❤️

I will take another picture later today , when I cut into it 😋
