"Most people see a slice of brisket; I see years of trial, error, and a relentless obsession with perfection. Over the years, I’ve watched the art of barbecue evolve, and I’ve evolved right along with it. We didn’t just settle for 'good enough'—we invested in the best equipment because that’s what it takes to achieve the best BBQ can be.

It starts with the heart of our operation: our 1,000-gallon offset smoker, where we manage fire and airflow to get that clean, thin blue smoke you can achieve on a massive scale. But the secret is in what happens after the smoke. We use precision CVap holding technology to let the meat rest at the exact temperature and humidity needed for the collagen to break down perfectly without losing a drop of moisture. From the heavy steel of our smokers to the science of our holding ovens, every piece of equipment we use is there to ensure that when that rib or brisket hits your plate, it’s the best version of barbecue humanly possible. We’ve put in the years and the gear so you can taste the difference."

We just got a new deep fryer and we’re putting it to the ultimate test! Meet our new smoked pork belly "chicharrones"—pork belly rubbed with salt, pepper, and garlic, smoked brisket-style, chilled, chunked, and flash-fried in hot tallow until crisp. Catch them down at the ANAF #265 St.Marys on the 5th Sept. served with warm queso or vibrant red chimichurri. You have to try these!
