Another season down, and looking forward to the summer. Here are two dishes I have created for the summer menu that I remembered to take photos of during the tasting.
1st - Neopolitan, dark chocolate semifreddo, vanilla epsuma, strawberry salsa
2nd - Chicken and Morel ballotine with potato puree and cippolini onions.
