Many of my baking recipes have been passed down by my mother. This is one of my favorites, both for taste and convenience. It was also one of the most popular muffins at the restaurant I had in my early twenties, Cobbleccino's Cafe in Cobblehill.

A mirepoix is a mixture of diced vegetables cooked with fat (usually butter) for a long time on low heat without coloring or browning. The ingredients are not sautéed or otherwise hard-cooked, because the intention is to sweeten rather than caramelize them. Mirepoix is a long-standing part of French cuisine and is the flavor base for a wide variety of dishes, including stocks, soups, stews, and sauces.
This seems like basic knowledge to me now but at one point I had no clue 🤔
Going beyond sweetness tonight and adding other vegetables and rice for a delicious stir fry 😋

A lovely afternoon with friends and cake of course 😊🍰❣️
I chose a panel of women to come and critique a few of my cakes. My main objective was flavor and texture. The two favorites were, Pina Colada and Raspberry Almond.

The white cake is my second attempt at a signature cake. This time I used a raspberry jam and an almond cream cheese whip. Inspired by my favorite cookie, the thumbprint.
As I admire its beauty and contemplate the balance of flavors I may opt out of icing and serve this cake completely naked.
