🍐🧀 The Hidden Pearl: Poached Pear Wrapped in Brie & Puff Pastry 🌟

Melted brie, wine-poached pear, and golden pastry—an elegant dessert or starter that oozes style and flavor.
Like a secret uncovered by candlelight, where sweet fruit and savory cheese meet in a buttery embrace.

Ingredients
Poached Pears

2 firm pears, peeled (stem left on)

500 ml red wine

100 g sugar

1 cinnamon stick

1 star anise

Zest of ½ orange

To Assemble

1 sheet puff pastry, thawed

1 small wheel of brie or camembert (about 150–200 g)

1 egg, beaten (for egg wash)

Fresh thyme (optional garnish)

Instructions
A crisp, golden exterior gives way to molten cheese and wine-kissed pear—this is no ordinary bake.

🍷 Poach the Pears:
In a saucepan, combine wine, sugar, cinnamon, star anise, and orange zest. Bring to a simmer, add pears, and poach gently for 15–20 minutes until tender but intact. Let cool completely in the liquid.

🧀 Prepare the Brie:
Slice the top off the brie just enough to nestle the pear in place. Remove a bit of the center if needed.

🥐 Wrap in Pastry:
Roll out puff pastry slightly and place the brie in the center. Stand the poached pear upright in the middle of the cheese. Fold pastry up and around to enclose, pinching to seal. Chill for 10 minutes.

✨ Bake:
Brush with egg wash and bake at 200°C (400°F) for 25–30 minutes until golden and bubbling.

🌿 Serve:
Garnish with fresh thyme and serve warm as a luxurious appetizer or show-stopping dessert.

It's that time of year when things start to slow down a little and my thoughts turn to the recipes I wanted to try all summer but didn't have time for. Tonight we tried a baked chunky salmon patty with my garden chives and dill. Really nice option for our fish loving friends and a fun way to showcase Atlantic salmon.

Hello, friends.
Thought I should check in and let you know that although I have cut back a little bit I'm still catering with a busy enough schedule. I'm looking into the new year I'm thinking it might be fun in the winter to take on a few dinner parties. Generally, it's a bit quieter in the winter and I can take time to experiment with new menus. Anyway, I thought I'd let you know that I've purchased a fair bit of really pretty Royal Albert China in the last couple of years (I'm a little bit obsessed) and I don't mind using it if you're having a very special occasion. It might be fun to have engagement parties, chick nights, anda dash of fine dining at home through the winter to keep us all socialized and make winter pass quickly. So thought I'd just give you that little update and say hello.
