This French onion mousse filled tart with osetra caviar is a decadent first course, served with a beautiful champagne it is definitely a special treat💕 the inspo for this beautiful dish is from a chef I follow (thanks for sharing your talent!) my version is a little less refined than his but I think it captures the essence 💕

Food always invokes emotion for me, but some flavours bring back memories. I’ve mentioned in the past that one of these childhood dishes for me is duck soup. Growing up in the north, the first pot of duck soup in the spring was a joyous celebration of the return to warmer days. I’ve created many variations of “duck soup” over the years, always with those memories at the core of the dish. This is my latest-“duck soup” bite- confit duck and wild rice stuffed cappelletti with smoked duck and morel stock and sweet freeze dried corn. It was an honour to cook for the GNWT health summit recently in Yellowknife, and it was an honour to speak with participants from across the North who hold similar memories of our traditional food and who appreciated my interpretation of some classic dishes.
