Raw preparations of meat and fish are my absolute favourite. When paired with some simple seasonings, you get to experience the full flavour of the meat in its purest, most delicious form. Hola! It's time for this page to get back to the good stuff....FOOD.
One of the highlights of all my trips is always the food, and this one was no exception. We indulged in fresh crab platters, lobster, tuna ceviche, sushi, the most unique tasting steak, the best late night pizza, and alllll the tostadas. And like B's new motto, "a tostada a day keeps me at bay." ๐Ÿ˜œ๐ŸŒฎ๐Ÿฅฉ๐Ÿ•๐Ÿฃ๐Ÿฆ€

The story goes if you add fresh Bay leaves under the skin of the chicken and baste the roasting chicken with white wine and butter, it transforms into the most delicious, moist, crispy skinned beauty there ever was. As we wrap up wedding szn, I reflect back through the last couple months and feel such joy. ๐Ÿ˜Š Working with Off The Vine Catering Powell River has been a dream and I feel like I'm home. Shout out to the boss babe, Charis Whitmore !๐Ÿ’ช๐Ÿฝ She has worked incredibly hard to get to where she is today and I couldn't be more proud. It's been incredible watching her organize such intricate events and pulling each and every one off flawlessly, and all with smiles and laughter! YOU MADE IT GIRL!! ๐ŸŽ‰โค We both have such different culinary back stories but we've come together to what I personally think is a dream team...it feels like we've been working together for years. She has already taught me so much and I just feel so lucky to be given another amazing opportunity to do what I love most. We're sad the weddings are done, but so excited for the things to come. Cheers sista๐Ÿฅ‚

I had a lovely evening at the beach the other night with my beach buddy, Bob ๐Ÿ•! Since we have a fire ban on right now๐Ÿ™„, I decided to play with charcoal. After the initial burn (about 20 mins in a charcoal chimney), I found it super to work with..not a lot of smoke and they burn HOT. Charcoal doesn't flavour food like a normal fire would but there's ways to work that smokiness in so I can't wait to play more. ๐Ÿค—๐Ÿชต๐Ÿ”ฅ.
For dinner I made jerk spiced sable fish that I wrapped in a banana leaf w. orange and cilantro. I finished it w. a citrus butter and cucumber, pepper, & pickled red onion slaw. So juicy and perfect combo of spice and sweet!๐Ÿ‘Œ
