Garlic Butter Chicken Pasta 🍝
Ingredients:
- 8 ounces pasta (such as spaghetti or fettuccine)
- 4 (16-ounces) boneless skinless chicken breasts
- Salt and fresh ground pepper, to taste
- 1 stick (1/2-cup) butter
- 6 cloves garlic, minced
- 1 tablespoon fresh rosemary leaves
- ½ cup Shredded Reduced Fat 4-Cheese Italian
- Fresh parsley, chopped (for garnish, optional)
Instructions:
1. Preheat oven to 375°F (190°C).
2. Lightly grease a baking dish with a pat of butter.
3. Season chicken breasts with salt and pepper; arrange chicken in a single layer in prepared baking dish and set aside.
4. Cook pasta according to package instructions until al dente. Drain and set aside.
5. In a skillet, melt butter over medium heat.
6. Stir in minced garlic and cook over medium heat for 4 to 5 minutes, or until lightly browned, stirring frequently. Be careful not to burn the garlic.
7. Stir in fresh rosemary and remove from heat.
8. Pour the garlic butter mixture evenly over the chicken breasts in the baking dish.
9. Bake chicken for 30 to 32 minutes, or until the chicken’s internal temperature reaches 165°F (74°C).
10. During the last 10 minutes of baking, prepare the pasta.
11. When chicken is cooked through, remove from oven and sprinkle shredded cheese over the chicken. Return to the oven for an additional 3 minutes, or until the cheese is melted.
12. Remove chicken from oven and let it stand for a couple of minutes.
13. Slice or shred chicken into bite-sized pieces.
14. To serve, divide pasta among plates, top with sliced chicken, spoon garlic butter sauce over each serving, and garnish with chopped fresh parsley if desired.
