Closing BENTO KITCHEN was the end of one meaningful chapter in Canada…and the beginning of another.

I’m truly grateful to everyone who supported and loved BENTO KITCHEN along the way. It meant more than you know.

These days, my husband and I are embracing a more nomadic lifestyle. This photo was taken in Chiang Mai, Thailand — one of the beautiful places we’ve been exploring while building our next chapter.

While the format of my work has changed, my passion hasn’t. I now co-run Signature Japan Experiences, designing thoughtful, personalized journeys to Japan for Canadians who want something beyond the typical trip.

Different chapter. Same love for connecting Canada and Japan!

And I’m truly enjoying this season of life.

We just got back from a business trip to Japan, and you know I had to explore some of the country’s most unique and delicious specialties.

🥩 Basashi (Horse Sashimi) and Liver Sashimi. Yes, that horse! Basashi is thinly sliced raw horse meat, and it’s a regional delicacy in Kumamoto. It’s incredibly tender, sweet, and often enjoyed with garlic, ginger and soy sauce (We ordered soy sauce with garlic, soy sauce with ginger, and soy sauce with hot miso paste). This dish is especially popular in Kumamoto, and it's served in restaurants and Izakayas across the town.

🍣 Kumamoto-Style Sushi. We had three types of sushi in Kyushu - Toro (fatty tuna), Uni (sea urchin) and Ikura (salmon roe) with three kinds of soy sauces! The variety of flavours gave each bite an entirely new experience for us.

March 11, 2011 - Never forget.

Today marks the anniversary of the 2011 Tohoku Earthquake and Tsunami. A magnitude 9.0 earthquake struck Japan, triggering a massive tsunami that devastated coastal communities throughout the eastern Tohoku region.

- Over 15,000 lives lost
- Countless homes and towns destroyed
- Fukushima nuclear disaster

Japan has rebuilt with resilience, but the memories and lessons remain. Let’s take a moment to remember those affected and continue to learn from this tragedy.

Plan on attending our sushi-making workshop or private lesson? Try to avoid these common sushi-making mistakes!

🍚 Using the Wrong Rice
Regular white rice won’t cut it! Sushi rice needs to be short-grain, properly rinsed, cooked, and seasoned with a balance of rice vinegar, sugar, and salt.

🍣 Overstuffing Your Roll, or Rolling Too Tight/Loose
If you fill too much, your sushi roll will fall apart. If you roll it too tight, you’ll crush it. The trick to rolling the right away is a gentle, even pressure!

🔪 Cutting Rolls With a Dull Knife
A dull knife or too much force can ruin your sushi’s shape. Always use a sharp knife, wet the blade, and slice in one smooth motion.

💟 Fun Fact: In Japan, women give chocolates to men on Valentine’s Day - either “giri-choco” (obligation chocolates) for coworkers and friends or “honmei-choco” (true love chocolates) for romantic partners. Then, on March 14th (White Day), men who received chocolates are expected to return the favour with gifts that are often more expensive.

Why do I love Futomaki so much?

Because it’s so versatile, and you can even make it vegetarian!

Here’s what I like to add to my Futomaki:
🦐 Steamed shrimp
🥒 Cucumber
🍄 Shiitake mushroom
🦀 Imitation crab
🍈 Kanpyō (dried gourd)
🥚 Tamagoyaki (Japanese egg omelet)
🐟 Oboro (white fish flakes)
🌿 All beautifully wrapped and sitting on a shiso leaf (a fragrant Japanese herb).

Fun fact: Futomaki rolls are named after a style of sushi roll, not an actual recipe.
