Still, every single plate comes through your hands. You wipe the edge. Fix the garnish. Make sure it’s right. Because once it hits that pass, it carries more than just food. Some nights, everything’s on fire. You’re buried in orders. You’re running on nothing but muscle memory and willpower. But you don’t fold. You hold the line. Because the pass is sacred. It’s where chefs are tested. Where teams rise together, or fall apart.
