I love foods that evoke familiarity and a sense of nostalgia yet pack a surprise in that familiar package. These dates stuffed with goat cheese, orange and nuts do just that with hint of spice from Aleppo chilli flakes. Recipe:
- Toast some 10-12 walnut halves at 350 for around 8 minutes and once cooked chop roughly
- In a food processor or by hand with a whisk, mix together goat cheese, zest from 1 clementine/orange, squeeze juice from 1/2 clementine, 1 tbspn honey and a teaspoon of olive oil
- Remove pits from dates and stuff with the cheese mixture. Top each one with Aleppo chilli flakes if you have (milder) or with black pepper. Top with chopped pistachio and pomegranate seeds photo credit

My love for eggplant is a poorly kept secret but this dish is further proof of why it is the single greatest veggie to sprout from the soil. Roasted eggplant slices are rolled around a filling of paneer and achar, then submerged in a coconut milk channa dal and then finished with curry leaf oil

Continuing with the desi theme here is item #2. Is it gobi aaloo or aaloo gobi? I guess the order in which you say kind of gives away which part you’re more interested in. This was my spin on the classic. Roasted some cauliflower with toasted cumin, garam masala and olive oil. And the also roasted the after par boiling until they were crispy enough to break the sound barrier. Served with a kari sauce made with kefir and turmeric. Finished off with a tarka of coriander and cumin

Last night was all about exploring desi flavours with slightly different techniques. Starting with my version of Rasika’s famous Palak Chaat. Spinach in a pakora batter briefly fried to become light and airy, homemade 10% yogurt, garnished with onions and tomatoes like any good chaat. Topped with my mother in laws recipe based imli (tamarind) chutney. Toasted cumin seals the deal on this one. If you’re ever in DC stop by at Rasika and have this and please don’t consider sharing, it’s bad manners.

Combining techniques and flavours for this awesome Salmon dish. and pan seared Salmon served on top of some stir fried gaiolan (Chinese broccoli) served with a turmeric and lemongrass curry. Mostly I cooked it because of the contrasts of colours and textures but the flavours worked well together

Introducing our updated menu for this week - we’ll also be serving south east Asian curries with a very special steamed rice topped with peanuts and stir fried fragrant herbs. The slider special for the week will be pad gra pow or spicy chicken stir fried with hot basil and cucumbers!
