Finally got a chance to use my Flamaduo! What is it you ask? Simply put it's a forged iron funnel that you super heat in your coals and drop in cold tallow, butter, or lard. For this cook I used Pearson Wagyu- Premium Grass-Fed Wagyu Beef smoked tallow and added some fresh thyme with it. Definitely gave it a very rich flavourful crust.

Pearson Wagyu Bavette a la Caprese! Absolutely love this twist with a perfect balance of rich buttery Wagyu that has a sweet char from the balsamic marinade, acidity from the fire roasted vine tomatoes and refreshing creaminess of the Burrata cheese. Fresh foccacia to soak up all that deliciousness.
