I had a lot of fun last night not only cooking for a great group, but also interacting! The hosts won a silent auction for a dinner with me, with proceeds going to kingsvillesouthshore rotary. They do amazing things locally and I was quite happy to give back just a tiny bit, to a group that means a lot to me ❤️ ❤️

Asian fusion was the theme, and I decided to “fuse” each course with a different cuisine. (fyi everything is gluten free) Check it out:

1. Japanese/Spanish
Bison tataki, smoked carrot purée, diced strawberry, roasted asparagus tips, pickled asparagus, miso aioli, toasted almonds

2. Thai/french
Shrimp stuffed crepe, butter poached lobster, roasted pork belly, coconut curry, mango

3. Korean/Mexican
Gochujang short ribs, smashed Caribbean sweet potato, guacamole, pickled onion, micro arugula

4. Thai/italian

Thai basil semifreddo, strawberry rhubarb compote, gingersnap crumble, black sesame tuile, Thai basil oil

A little more casual approach to a good friend’s birthday celebration, thrilled to cook for you, Dave! Hope you enjoyed!

Had this type of menu in the back of my head for a while, just needed the right group. (As long as there was no dill, mushroom, tomato, broccoli, peppers………..) 😂

Menu:

honey whipped feta, strawberries, fennel, prosciutto crisp, pistachio, micro arugula, Dijon vinaigrette.

Waffleuterie board:
Coffee crusted beef tenderloin
Roasted crispy skin pork belly
Grilled shrimp
Sweet potato fritters
Waffles
Plum/red wine chutney
Blue cheese sauce
Chimichurri
Mustard aioli
Picked onion
(Topped with a fried egg)

I’ve had a fair amount of new followers of late (thanks for that!!), and also received more than a couple inquiries with questions on what the actual process is like if you book a dinner with me.

Here’s an explanation with some pics, about one of my favourite parties I have had in the last couple of years. Keep in mind, that a total surprise menu is my favourite, but I know it’s not for everyone.

A family was celebrating their parents 50th anniversary, and wanted me to cater it, but also wanted me to totally surprise them. After inquiring about any allergies, or aversions, I dug a little, and found out that a couple months back, the happy couple had celebrated themselves in Portugal, so I decided to culinarily take them back, with my twists.

I always spend a lot of time coming up with customized menus for my guests, but this one required a little extra effort, since I was not extremely familiar with their cuisine.

Here’s a brief description of the menu. If you’re interested in booking something that is fully customized to your group, let’s chat!

1. Pasteis de Bacalhau (cod fritters) lemon garlic aioli, carrot ribbon salad honey lemon vinaigrette, candied pecans, kalamata olives, hot honey goat cheese

2. Smoked pork belly, grilled shrimp, sweet corn puree, piri piri sauce , crispy potato skins ( cause there has to be potato somewhere)

3. Braised beef cheeks, plum and port reduction, fried egg, chestnut puree

4. Pasteis de Nata (world famous custard tart), almond and ginger crumble, port macerated cherries

It’s always cool to go to “gig” at a stranger’s house, and then by the end of the night you realize there’s hidden connections around the whole table. The stories of my dad driving multiple par 4 greens at the golf course, only to 3 putt for par were commonplace. The 19th hole was where he made up his strokes I guess.

Italian was requested (seems to be the most popular choice???), check out the menu:

1. Fried polenta cake, fennel salad, torched clementine, Kalamata olives, burrata cheese, limoncello vinaigrette

2. Hazelnut crusted halibut, roasted beet puree, roasted heirloom carrots, lemon caper beurre blanc, micro kohlrabi

3. Braised beef cheek, butternut squash ravioli, Parmesan crisp

4. Amaretto poached pear cheesecake, toasted almonds, amaretto salted caramel drizzle

Had a great night celebrating a milestone birthday for a close family friend and his family last night! They bid and won a live auction for the dinner as part of the annual gala. I definitely have a soft spot for the wonderful work they do there! (Just keep sliding an extra piece of pie to the guy on the second floor, last room on the north side 😉)

The direction of the menu was totally up to me , with a few requests: lamb, pickerel, and pineapple. Here’s what I came up with:

1. Torched feta, topped with tomato, cucumber, shallots, Dijon vinaigrette and toasted pita crouton

2. Venison carpaccio, grapes, pickled celery, caciocavallo crisp

3. Pickerel cake, roasted pickerel, “martini” sauce, fennel slaw, torched lemon wedge

4. Braised lamb shank, saffron risotto, king oyster mushroom, micro arugula

5. Pineapple amaretto tiramisu

I recently offered a dinner for auction at the Neighbourhood Charitable Alliance’s Fall Ball. They do such good work in our community, I am very happy to have helped out just a little!

I decided to do a California theme, which is a good blend of Mediterranean, Asian and Mexican cuisines, emphasizing local produce, seafood, and proteins.

Check out the menu:

1. Honey whipped ricotta cheese, assortment of cocktail tomatoes, grapefruit, blackened shallots, pistachios, and a torched sourdough crouton

2. A play on cioppino, which originated in San Francisco. Shrimp stuffed ravioli, lobster tail, oven roasted halibut, tomato based seafood broth, Kalamata gremolata

3. Braised Baja short ribs, smoked corn purée, roasted poblano pepper, pickled onions, cotija cheese, lime crema

4. Avocado semifreddo (Italian frozen dessert in between mousse and ice cream)
White chocolate/hazelnut crumble, strawberries, basil

Such a great night and great group!

What a birthday celebration!! Great setting, great people, even an expert wine tasting!

Larger group than I am used to, so I had to bring in my secret weapons. (My daughter, and her bestie, goodpupsbyolivia, who by the way, if you have dogs, and want a gourmet experience for your pooch, look her up! )

Kind of a holiday menu with a Mediterranean feel last night, check it out:

1. Elk carpaccio, topped with roasted grapes, crushed peppercorns, shaved salt cured egg yolk, shallots, honey whipped feta, roasted carrots, arugula salad, cranberry orange vinaigrette, toasted pecans

2. Champagne and saffron risotto, lobster tail, cab claws, micro arugula

3. Lamb saddle roulade stuffed with parsley, spinach, Kalamata olives, and dates, chestnut sauce, mixed mushroom medley, chimichurri, pomegranate, golden beet purée

4. Chai crème brûlée, toasted almonds, raspberry, mint

Joyeux Noel!!
A couple of key component requests (charcuterie, steak and lobster, and scallops) lead to a French theme for last night’s Christmas party.

Started off with the charcuterie board which had three different cheeses and meats from France, thanks to thecheesebar.ca , for the great selection and help, allow I could have used a bit more help with some pronunciation. 🤣🤔
My additions to the board were a spicy honey/dijon, fig and espresso balsamic compote and pickled shallots.

Second course, red and golden beet puree, seared scallops, toasted hazelnuts, micro arugula.

Third, beef tenderloin, butter poached lobster, roasted portobello mushrooms, potato pavé, cognac cream sauce

And dessert was a champagne poached pear, salted caramel custard, mixed berries, whipped cream, shaved dark chocolate and a crispy crepe shard

Ladies night for some Christmas cheer!! Driving down the long lane way, which was full of Christmas lights, definitely got me in the spirit! What a setting!!

All appetizers, and a casual feel, a bit of a change from the usual sit down meal. It was a great vibe!

Here’s the lineup:

1. Tuna tartare, avocado, black sesame seeds, burnt shallots , cilantro

2. Chestnut veloute, leek, wild mushrooms (lobster, morel , and shiitake), chestnut and Parmesan crumble, pickled apple skins, micro radish

3. Torched clementine, burrata, chili oil, pistachio, orange zest

4. Persimmon, topped with, Brie, butter poached lobster tail, citrus aioli

4. Persimmon, topped with Brie, Italian sausage, fennel slaw, Kalamata, citrus aioli, fennel greens

5. Duck confit bao buns, roasted purple cabbage, pickled shallots, chili oil, pomegranate

6. Sweet potato fritter, coffee crust beef tenderloin, horseradish aioli, scallions, fig, blue cheese

7. Limoncello tiramisu, raspberry, toasted almonds, shaved dark chocolate, mint, lemon zest
