So when I started cooking all those years ago, it was for one reason. To cook good food for those I loved. So the wine with dinner was very appropriate, Therapy Vineyards “let’s Start From The Beginning”, was a great accompaniment to tonight’s dinner. I decided to take a look at the traditional roast chicken dinner and bring it up a bit. Date night at home never disappoints. Sousvide Chiken breast finished with butter in the oven, confit chicken leg, fondant potatoes done in bacon fat, asparagus done sousvide with butter and thyme, with a roasted Kombucha squash purée and crispy chicken skin. All served with a deep rich chicken Jus. @ Penticton, British Columbia
