Tonight I had the chance to step out of the BBQ smoke for a bit and volunteer with the Crossfield Long Table Dinner — and what an incredible night.
Nearly 100 guests came together around one long table for a menu built around local food, local producers, and a whole lot of teamwork.
The night started with Tomato Gazpacho Shots, Pear & Goat Cheese Crostini, and Bruschetta, followed by a beautiful Beet Salad with Gorgonzola Mascarpone Dressing and Fennel Slaw.
For the main course, we served Braised Pork Belly with Celeriac Purée & Maple Whiskey Glaze, alongside Baby Carrots with Cowboy Butter.
And dessert finished the night with a Blackberry Mini Cheesecake and Vanilla Bean–Basil Macaron.
Getting to help plate and serve food made with ingredients from local vendors like The Soup Boler, Grains & Glory, Souto Farms, Backyard Bounty, Sylvan Star Cheese, E’Gio Olive Oil, Whispering Winds Farm, Kunekune Pork, Township 27, Two Rivers Distillery, Von Slicks, Wolfbay Cafe, and Energro Greenhouse made the night even more special.
As a chef and the guy behind Moxley’s House of BBQ, I love opportunities like this. You get to work beside talented people, learn some new things, help pull off a massive service, and give back to a community that has been incredibly supportive of Moxley’s.
