Why our fries are different…

At Barr & Co., every batch of our hand-cut fries is crisped in 100% beef tallow.

It’s the traditional way chefs fried potatoes long before highly processed seed oils became the standard. The result is the kind of fry we’re proud to serve: crispy on the outside, fluffy on the inside, and packed with rich, savoury flavour.

We put together this quick guide to explain what beef tallow is, why we use it, and what makes it such an important part of our process.

We are so grateful to be a part of the 519 community. The amount of support and positive feedback we have received from you all means the world to us. We want to make delicious food and support/collaborate with as many local businesses and people as possible. Thank you Dine in 519 for showing us so much love. Looking forward to what’s next! 🫶🏻

I just found out today is 519 Day. A day that celebrates everything that makes Southwestern Ontario such a special place.

To me, it really is. It’s probably why I’ve spent the last 6 years telling the stories of the people and places that make this region what it is. An area code that stretches across more than 36,000 sq km, filled with small towns, backroads, farmland, diners, markets, fruit stands, and some of the hardest working people you’ll meet.

I’ve travelled to a lot of places around the world, but this will always be home. There’s something about Southwestern Ontario that’s hard to explain unless you’re from here. It’s not flashy. It’s not trying to be anything it’s not. It just operates with heart over hype and has just about everything you could ever want.
