Fruity tart recipe that always works!

- 400g spelt flour (or wholegrain)
- 2 tsp baking powder
- 1/4 cup brown sugar (for sweet tooth hapf cup)
- 1 1/3 cup plant based milk
- 1/2 cup oil
- 1/2 tsp vanilla extract
- 2 handfuls of fruit of choice, choose whats in season (I love to make it with plums, strawberries, peaches, nectarines) - cut in slices!
Combine dry and wet ingredients separately, I usually mix it all together with hand. Today i used to mix it and loved the texture. Do not over mix, just enough to combine all ingredients. Lay it on the paper sheet in a medium baking tin. Press the cake mix to the bottom. Consistency is quite dry. Layer fruits on top, press them gently into cake mix.
Bake 45mins at 180C!
Optionally once is bake, u can sprinkle it with icing sugar, i usually don’t do it if you wish then mix 2 tbs of powder sugar wih 1-2 spoons of lemon juice and sprinkle on freshly baked cake.
