Fruity tart recipe that always works!
🍓🍇🍑🍒🍎
- 400g spelt flour (or wholegrain)
- 2 tsp baking powder
- 1/4 cup brown sugar (for sweet tooth hapf cup)
- 1 1/3 cup plant based milk
- 1/2 cup oil
- 1/2 tsp vanilla extract
- 2 handfuls of fruit of choice, choose whats in season (I love to make it with plums, strawberries, peaches, nectarines) - cut in slices!
Combine dry and wet ingredients separately, I usually mix it all together with hand. Today i used to mix it and loved the texture. Do not over mix, just enough to combine all ingredients. Lay it on the paper sheet in a medium baking tin. Press the cake mix to the bottom. Consistency is quite dry. Layer fruits on top, press them gently into cake mix.
Bake 45mins at 180C!

Optionally once is bake, u can sprinkle it with icing sugar, i usually don’t do it if you wish then mix 2 tbs of powder sugar wih 1-2 spoons of lemon juice and sprinkle on freshly baked cake.

Vegan Bolognese with mince meat !!! Yes please!!!
Taste is absolutely fantatsic! Couldn’t recommend it more to anyone also meat lovers! makes fantastic beyond burgers and sausages and this lmeat is what you need to replace ground beef! Now meat replacements can be so tasty!

I used old traditional old bolognese recipe and replaced mince meat with thats it! I would say difficly to recognise this is actual vegan! Served with wholegrain pasta! Would def make it again this week!!! I normally make bolognese now for 6 years using red lentils, which is very healthy meat replacement however lentil do not taste like ground beaf, this mince meat is the way to go if you missing the taste of meat!

Tofu schnitzel, white cabbage, chestnut mushrooms and puree!
We love dit here so here is how to make it!


- tofu slices (i choped into 1cm thick slices and pressed using kitchen towel to get rid of moist first), dunked in soya milk and covered with breadcrumbs mixed with fav spice mix ( i mixed homemade breadcrumbs with salt, pepper, sweet paprika powder), fry with small amount iof oil, on both sides until golden,
- white cabbage, chop, cook on low heat with onion, garlic, grated carrott and hanful of fresh dill, season with sat, pepper, 1 tsp tomatoo puree,
- mushrooms cooked approx 4 mins with bit of oil, lots of dill, salt. Easy and quick! So yum!
- my fav potatoe puree: cooked potatoes, mash first then add 3 tbs of unsweetened soy yoghurt, fresh dill, spoon of vegan butter, carmelised onion.
Eating vegan can be as simple!

Vegan banana oat omelette for a great start of the day!

Easy recipe with just few ingredients!
- 1 banana, mashed with a fork
- 30g rolled oats
- 1 “flax egg”: 2 tbs ground flax seeds, mixed with 6 spoons of water, set aside for 2 mins. Here originally is 1 egg, whisked. To veganise the recipe I replace egg with flaxseeds or chia seeds soaked in water.
- 2 tbs of unsweetened soy milk.

Mix everything in a bowl. Fry on both sides on a hot pan. This portion is for one serving.
Garnish with favrourite toppings, here I used unsweetened soy yoghurt and fresh blueberries.

This morning I just made Apple Pie flavour porridge 🍏🍏🍏

Same as yesterday used 3:1 ratio milk/water to rolled oats.
Additionally added 1 spoon of unsweetend apple mouse to cooking oats and chopped in cubes half of an apple and cooked all of this together with good pinch of cinammon.
Serviously the porridge taste like melted apple pie.
Happy to enjoy it in bed this cold morning!

Good morning! 💛💛💛
Warm porridge season has officially began.
Recently watched Video on making oatmeal 5 ways and I totally switched to his 3 to 1 ratio! I was 2:1 ration kind of girl but this is game changer!
3 parts liquid to 1 part oats! This makes oatmeal more moist just like my momma made it!

Here is the recipe for one portion, I used half cup as main measuring half cup is perfect for one portion:

- 3 half cups of soya milk, bring to cooking then add
- 1 half cup of rolled oats (not instant!)

Cook for around 5 - 7 mins. Add a good pinch of cinammon, one drop of vanilla essense, 1 drop of agave. Mix with wooden spoon and viola!
Today I added 5 cubes of frozen mango at the end of cooking. Just add any fruit you want.
Pour it in the bowl and sprinkle some more cinammon!
Yummy!
