The chef has spoken. 🫡
Before every service, the kitchen falls silent for a few minutes. Everyone is focused, listening carefully as the chef assigns roles, explains the flow and shows the brigade exactly how each plate should be presented.

Who does what, in which order, and how.

The purpose of this briefing? To ensure consistent plating from the first plate to the last.
Then, service begins. And everyone knows their part.

This one was a one-time thing.
At The BEL, chef Damien Audusseau imagined a seated dinner for 350 guests, made to be shared.

From maatjes and langoustine to burratina, yellow poultry and rhubarb granité, we can say the challenge was completed.
