Northern Italian 'cucina povera' cuisine at its best. Creamy polenta with a Portobello mushroom, white wine & truffle sauce. Absolutely brilliant in the cooler weather. Nth Italy grows huge corn crops cos we eat so much polenta up there, we're known as 'Polentons'. Portobello mushrooms grow wild in the forests, as do black truffles. Polenta is a staple, and is delicious made correctly. There's an old Friuli saying:
Vai u, Vai u polenta,
Ca' il formai
A le la dentra
Go in, go in polenta, the cheese is already inside. Often the super poor couldn't afford the cheese to eat with their polenta, so they'd say this rhyme to 'trick' the polenta (and themselves), and just eat it on it's own.
I've made enough polenta to last me a week as it cools into a solid block and has a variety of uses. And I LOVE it 😍💖
