This barbecue world is a wild one. Over the past three years, I’ve had the privilege of cooking for thousands of people, from huge crowds to intimate groups. And honestly, it doesn’t matter if I’m feeding 500 or 30 as long as I get to see the satifacton of a good meal on their faces, I’m happy.

Not too long ago, I was grinding away at jobs that didn’t pay much, feeling pretty lost about where life was headed. So to now be doing something I genuinely love… that means the world to me.

I’m proud of how far this journey has come and even more excited to see where it’s going.

Meatstock isn’t just about food. It’s about passion, craft, and the people who pour their heart into every bite. This year brought together some of the most genuine, talented folks in the game, and the results speak for themselves.

Grateful to be apart of this epic event, and already looking forward to what next year will bring.

Butcher Tom did an amazing job keeping things moving on the pits this past weekend. Tom and I met a couple years ago at a small event in Albury and since then he has become a staple of the Carolina Smoke team. Rockstar through and through! 🤘🙌🔥

The new beast had her maiden voyage this weekend at Meatstock Sydney. I just want to say a huge thanks to Stefan from for helping me out on this build with CAD designs and lending me his big boy welder for a couple weeks! I also want to shout out Dan from for knocking out this awesome wooden sign for me in a couple days, I think it really added some character to this pit. Can't wait to fire it up again soon!

What a massive effort! Our little team managed to keep it moving all weekend in the blistering heat, and I couldn't be more proud! We had a great time feeding the masses this weekend and meatstock Bendigo and can't wait for Meatstock Sydney in just 5 weeks! Bring it on!
