A Love Letter to the Mulberry Leaf

Once upon a cocktail… we fell for the humble mulberry leaf, soft, green, and quietly extraordinary.

This drink, the Quandong, Mulberry Leaf & Smoked Red Gum Salt Cleanser, began as an experiment in flavour and ended up a sensory flight through the Australian landscape:

Quandong-infused tequila — smoky and bright.

Four Pillars Bloody Shiraz gin — rich and bold.

Mulberry leaf foam — delicate, floral, and alive with the scent of spring.

Olsson’s smoked red gum salt — grounding it all with a whisper of the bush.

What we love most is that this drink isn’t just mixed — it’s crafted, foraged, and felt.

Happy National Wattle Day!

Australia’s golden bloom isn’t just beautiful—it’s edible, ancient, and full of story. The Acacia saligna (Golden Wreath Wattle) has long been part of First Nations foodways:
Flowers → brewed into teas, tossed in salads, even fried into fritters.
Seeds → roasted or ground into spice, rich in protein and nutty flavour.
Gum → tangy and acidic, perfect for pickles and preserves.

At Trolley’d, we honour this knowledge with our Roast Wattle, Cacao & Redgum Honey Espresso Martini—toasty, earthy, and sweetly complex, like sipping the landscape itself.

Our Story

Trolley'd is Australia's first mobile bar and events company embracing the qualities of sustainability, foraged native Australian and local organic produce, all served from re-purposed airline equipment, and airline trolleys up-cycled into mobile bars.

Our cocktails and mocktails use foraged native ingredients and are designed around what is locally and seasonally accessible. Tapping into what is available through the natural cycles of nature, we use the freshest produce and make our bespoke mixers; tinctures, syrups & cordials in-house from local organic, native & foraged ingredients. Our garnishes are lovingly grown in our garden, and foraged from the wondrous world of nature that is available to all of us.

Fresh from the runway in Alice Springs, our deconstructed Shorts 330 Aeroplane party is a regular feature on the Australian festival circuit. We produce unique creative to meet the needs of clients in the corporate sector looking for brand activations and team building experiences. Our cocktail classes are well known for their native spin, focussing not only on the creation of the drink, but also on foraging and re-empowering patrons with the knowledge of where their ingredients came from. Our Trolley’d crew are of the highest calibre of hospitality and service standards, ambassadors of the brand and styled with a variety of different first class cabin crew looks depending on the event theming.

At Trolley’d we believe in making a positive difference by helping to protect our planet and using our platform to educate whilst having a lot of fun along the way. We practise the following principles as part of our business ethos : reduce, reuse, recycle and regenerate. Our mission is to take the world to new heights, and to leave the planet at least a little bit better than when we found it.
