Boarding now at Living Edge.

We brought the Trolley’d bar into the showroom for an evening of cocktails, good design and proper hospitality.

The drinks matter, but so does everything around them: the setup, the service, the pace and those small details that make the bar feel like part of the event.

At AIME 2026, the job was to create a hosted-buyer lounge people would enter, use and remember, without compromising the conversations the event existed to produce.

The cockpit created the visual anchor. Trolley service kept hospitality moving across the two trade-show days. The drinks programme gave the room local detail without turning the menu into a lecture.

The strongest event ideas do two jobs at once: they change what the room feels like and make the room easier to use.

The bar prep took a detour.

A quick lantana forage on the way to an event. Pink and yellow flowers, a steel bowl and a story that starts before the first pour.

Lantana camara was introduced to Australia as an ornamental. It became an invasive w**d, with birds spreading its seeds after eating the berries.

Removing complete flower heads before fruit develops removes those potential berries. It won’t control an established patch, and eating the flowers isn’t necessary to interrupt that cycle.

The food history is nuanced too: ripe fruit has documented culinary uses, while flowers feature in edible-flower research. That research hasn’t established a safe serving of fresh flowers.

Knowing the plant means knowing the part.

The aircraft earns attention. The operating plan earns the booking.

Before it enters a site we work through access, surface, service flow, power, weather, licensing and the point at which the room needs to change from arrival to hospitality.

If the full fuselage is not right for the footprint, the cockpit, Skyline bar and trolley fleet carry the same visual language at a smaller scale.

A lemon should not have one job.

We’re landing in Kangaroo Valley on Saturday 1 August for Citrus After Dark.

We’ll make a citrus syrup from fresh local fruit, look at what the peel, zest and juice are actually good for, then put the method to work in two cocktails made with Old Salt Distillery spirits.

You’ll also have light snacks and leave with the syrup you made and the recipes to use it again at home.

No cocktail experience is required. We’ll show you the method.

A lemon should not have one job.

On Saturday 1 August, Trolley’d is heading to Kangaroo Valley for Citrus After Dark, a hands-on cocktail workshop built around fresh local fruit, whole-citrus preparation and spirits from Old Salt Distillery.

You will make citrus syrup from scratch, prepare two cocktails, learn professional techniques and take home your own bottle of syrup and recipes.

Walking the Kangaroo Valley property, we found nine wild plants already growing there.

Not planted for effect. Not styled for a shoot. Just there, in the ground, doing what wild systems do.

Some edible. Some invasive. Some native. Some useful because they ask better questions than they answer.

That has become the starting point for the Wild Systems Immersion: a curated botanical walk through place, ecology, flavour, and regenerative hospitality.

The Wild Systems Immersion page is now live, along with a destination blog on the Kangaroo Valley property and a new set of plant entries in our foraging library.

This is the quieter side of Trolley’d. Still hospitality. Still theatre. Just closer to the soil.

Nine years at Pitch Music & Arts, and we are still finding new ways to make the artist bar feel like its own little departure lounge.

This year we served the Pitch Spritz: Illawarra plum, riberry and lemon myrtle, poured by our First Class crew and carried through the festival with the Trolley’d cocktail backpack.

There were plenty of good moments, but the closing set with Job Jobse was hard to beat.

Pitch has always been special for us. It is where the weird ideas get tested, the crew earns their wings, and the bar becomes more than a bar.

It becomes part of the story.

Nine down.

The tenth is going to need a bigger flight plan.
