One of the joys of working in a shared workspace is the other amazing business you get the meet.
We got some extra radishes from which meant making some pickles! 💖
PINK PICKLES
2 bunches radish
1 red onion
1 cup water
1 cup cider vinegar
2 tbsp sugar
2 garlic cloves
1tsp fennel seeds
1tsp dried juniper berries
1/2 tsp dried oregano or thyme
Wash the radishes and remove the greens.
Slice radishes and red onion thinly using a mandolin or sharp knife.
Pour cider vinegar, water and sugar in a mixing bowl and mix until sugar dissolves.
In a clean mason jar, add sliced radishes, onion, garlic cloves, fennel seeds, herbs, and dried juniper berries.
Top with the hot vinegar mixture.
Close the jar and give it a good shake.
Store in refrigerator. The radishes are ready after 2 hours.
