PROTEIN CHICKEN AND MAYO TOASTIE 🤍🥪
Simple ingredients. Big flavour. The kind of lunch you can throw together in minutes but still feels SO good.
Made with JUST bread made with JUST a handful of ingredients: flour, water, yeast, oil, vinegar and salt. That’s it. No overthinking, just good bread 🙌🏼
This toastie is packed with protein, melty low-fat mozzarella, creamy cottage cheese for the perfect combo.
Ingredients
    •    100g cooked chicken, shredded
    •    2 tbsp cottage cheese
    •    40g low-fat mozzarella cheese
    •    1 spring onion, finely sliced
    •    1 tsp minced garlic
    •    Handful of spinach, chopped  
    •    Low-fat mayonnaise or aioli
    •    2 slices JUST bread
    •    Salt and pepper, to taste
Method
    1.    In a bowl, mix together the chicken, cottage cheese, spinach, mayonnaise, mozzarella, spring onion and minced garlic. Season with salt and pepper.
    2.    Spoon mixture onto one slice and top with the second slice of bread.
    3.    Toast in a toastier for 6–8 minutes, or cook in a frying pan for 2–3 minutes per side until golden and melty.
Slice in half and enjoy 🤍
