Stage 6 of 6. This is what it's all been for.

The table goes down. The guests walk in. And everything that started at 1am — the trim, the rub, the smoke, the wrap, the rest, the glaze — lands right here, in this moment.

Stage 5 of 6. The glaze and finish.

After the rest, the sauces and glazes go on and the meat goes back in to set. Depending on variables on the day, sometimes it needs another round of heat to get the finish right. We don't cut corners here either.
