~~~A Versatile Classic ~~~

When you hear crepe, cheesecake, profiteroles or flan, the first thing which comes to mind is desserts.

But those classics can easily become a lovely and tasty entrée.

In our next box, you will have a flan made with Comté (one of the best semi-hard French cheese types in my humble opinion 😋) and caramelised onions to bring some sweetness, puff pastry as a base and also on the top to double the pleasure.

Since my last trip to South Korea, I have been obsessed with their pastes, marinades and fermented vegetables.

The complex flavours of the gochujang adds some punch to many dishes.

For this box, I will use it in a dressing to pair with the 'meaty' eggplant. It's a lovely combination without being too spicy. To balance everything, the crunchiness and freshness of the fennel will bring an extra texture.

I'm sure everyone has a favourite condiment that they like to accompany with their meals. Whether it's ketchup, chilli oil or mayo, the dish somehow doesn't taste 'quite right' without it.

My favourite is the Dijon mustard (of course! 😉🇨🇵). Coming at a very close 2nd is chutneys. Thank you to the Indian culture for bringing chutneys to the culinary world! Even if I don't cook Indian food myself, I love to make chutneys to add an extra punch to my cooking.

~~~ A 2 Hour Bath ~~~
It's important to marinate your protein for the right amount of time.

For a delicate piece of fish, a good 30 minutes is usually sufficient, depending on the thickness. Beef and pork needs more time. For best results, overnight is better. For poultry, 2 hours is just right.

The marinade gives the protein with so much flavour and it also helps tenderise the flesh. It's a simple process that can take extra prep time, but it's so worth it!!
