Sometimes cooking pizzas with fire 🔥 can make things a little more exciting than normal 😂

Nothing that my Ooni Koda 16 is not used to thou… 🤪

From great pizzas there’s always a lot of trial and errors, it’s part of the game. Never quit. Trust the pizza process 🍕

🍆 🇮🇹 Eggplants are one of my favorite veggies, seriously I just can’t have them enough 😋

Here I’ve created an amazing (+ super cute version) of a dish, which is not Italian at all, but that use truly Italian flavours, like…

🍆 Eggplants
🍅 Tomato sauce
🌿 Basil
🧀 Cheese (yes this is vegan made with cashew)
🥔 Potatoes (yes there are from everywhere in the world, but Italians love patata 😅 IYKYK)

I had super fun making fresh pasta again after so long, of course with my nonna’s 60+ years old pasta machine 😍

Hey this ravioli are vegan + gluten free, a new challenge for me, and as first time making them, the result was absolutely amazing 👌🏻

The only thing… there weren’t enough 😅

day with the fam here in the heat of the Italian summer 🇮🇹 🥵

Using a normal home oven, experimenting with flour:

• Pizzeria: for half potatoes and onion and mushroom Margherita + local farmer macagno cheese

• Fioreglut (GF flour of Caputo) for 3 different pizzas, all VEGAN 🌱:
1. Margherita with red onion and mushee
2. Bianca with figs, onion jam, sage, stracchino & mozza
3. Yellow datterini sauce, mozzarella, marjoram

I loved the flavours, just miss the burnt crust of my Ooni Koda, especially in the GF pizzas.

But I’ve enjoyed playing with those pizza in the tray style.

What’s your favorite, between Neapolitan and pizza in the tray style?
