If you know me personally, you know I love to bake! This morning I whipped up two very easy slices, apple slice with caramel buttercream icing and chocolate fudge slice. While these slices are not part of my menu I thought I’d share for some weekend inspiration ☺️ I’ll probably take some of these baked goods to netball tomorrow to share with those who volunteer their time (coaches, team managers etc) for our kids 💜
For those who would like the recipes…
Apple slice:
2 cups SR flour
1 cup sugar
3 apples, peeled, cored & diced (I used Granny Smith)
125g butter
I egg
Toss apples with SR flour and sugar in a medium mixing bowl
Melt butter, stir in egg. Pour mixture into apple, sugar and flour. Mix until combined
Spoon into a greased and lined slice tin
Bake @ 180 degrees for around 30 min or until top is golden
Slice doesn’t require any icing and is lovely to eat warm with ice cream as a dessert, however I felt a little indulgent today and decided to make a caramel icing…
Caramel buttercream icing
100g butter
I cup brown sugar
1/4 cream
2 cups icing sugar
Melt butter and sugar slowly and bring to the boil, stir for 2 min (important to avoid grainy caramel) stir in cream. Let caramel cool for around 5 min then whisk in icing sugar 1 cup at a time. Spread over cool slice
Chocolate fudge slice
1 cup SR flour
1 cup brown sugar
1 cup desiccated coconut
2 tbls cocoa
125g butter
I large egg
Combine all dry ingredients in a bowl. Add melted butter & combine. Add egg & combine.
Press into a greased and lined slice tin and bake for 12 min in a mod oven.
Ice with chocolate icing while warm.
Choc icing
1 cup icing sugar
1 tbls cocoa
20 g melted butter
Small amount of water if needed
